Ingredients
3 medium onions, thinly sliced1 tablespoon light butter1 tablespoon flour (white)1 teaspoon salt1/2 teaspoon black pepper3 cups fat free, low sodium beef broth
Directions
Cook onions in butter for about 20 minutes, or until completely cooked through. Add flour and continue to cook, while stirring, for 3-5 minutes over medium heat. Add 3 cups of broth slowly, stirring constantly. Bring to a boil and let simmer for 20 minutes. Season to taste with salt and pepper.

Top with cheese and bread of your choice (I use sourdough and gruyere) and broil until bubbly. I left off the cheese and bread from the recipe because I often change the type and amount of both bread and cheese.
