1 Tbsp Olive Oil1 Med. Onion, diced1 Red Bell Pepper, diced2 Garlic cloves, minced2 15 oz. cans blackeyed peas rinsed and drainedor 1 pkg. dry black eyed peas soaked and precooked1/4 cup Vegetable broth or water1/2 tsp. Ground Black Pepper2 Green Onions, thinly sliced1/4 cup Flat Leafed Parsley, minced
Heat olive oil in lge saucepan over med. heat Add onions red bell pepper and garlic. Saute until onions are translucent (approx. 5 min.)
Stir in precooked black eyed peas, water pepper. Reduce heat to low cook 10 min. Stir in green onions and parsley.
Serve on top of brown rice and garnish with cheese. Add hot sauce if desired
