Chicken Parmesan

Ingredients
Chicken Breast, 600 g (3 halves)1/4 c. flour1/4 c. egg white1/2 c. bread crumbs, italian style3 T. oil1 c. spaghetti saucefresh basil1/2 c. italian four cheese blend, reduced fat1/4 c. parmesan cheeseSalt and pepper, to taste
Directions
Preheat oven to 350 degrees. Place each chicken breast in a plastic baggie and beat flat until 1/4 to 1/2 inch thick. The breast should have the same thickness throughout. Place the egg white, flour and bread crumbs in separate bowls (or pie pans). Add salt and pepper (to taste) to the flour and mix. Heat 3 T. of oil in a skillet. Dip each flattened chicken breast into the egg white, flour, egg white (again) and then bread crumbs. Place each breast in the skillet and brown on each side (note: the chicken will not be fully cooked). After browning, place each breast in a baking dish. Cover with 1 cup of spaghetti sauce, 1/2 cup of cheese blend and 1/4 c. of parmesan cheese. Sprinkle with fresh basil. Bake at 350 for 10-15 minutes, or until chicken is fully cooked. Makes 6 servings.
