Date and apple bread

1 cup diced dates1 cup of coffee (1 cup boiling water, 1 tbsp instant coffee)1 1/4 cup of white flour1 cup whole wheat flour2 tsp baking powder1/2 tsp baking soda1/2 tsp salt3/4 cup brown sugar1 egg1 cup applesauce (unsweetened)2 tbsp melted butter2 cups diced apples
Put the dates in a bowl with the coffee - set aside
In a big bowl, mix the flours, the baking powder, the baking soda, the salt and the brown sugar.
In another bowl, mix the butter, the egg and the applesauce. Add the apple and the date mix.
Mix with the dry ingredients
Pour the mix into 2 greased bread molds (8'' x 4'')
Cook in a 350 oven for about 50 minutes (until a knife comes out clean when inserted in the middle of the cake)
These bread can be refrigerated for up to 1 week, and frozen for up to 2 months.
Makes 2 breads of 10 portions each.
