Kari's Sweet Potatoes

Ingredients
2.5 pounds fresh Sweet Potatoes2 large eggs, beaten3 tbsp butter, melted2 tbsp brown sugar1 tsp kosher salt1/2 tsp cinnamon1/2 tsp ginger1/8 tsp nutmegground black pepper to taste
Directions
Peel, cube and boil Sweet Potatoes. Mix all ingredients together with electric mixer until fluffy. Cook at 350 for 30 minutes.
