Spiced Banana Ice Cream

Ingredients
2 cups milk, whole2 cups cream, heavy whipping.875 cups sugar.5 cup brown sugar, light2 bananas, medium (preferably brown)1 cinnamon stick.5 tsp nutmeg.5 vanilla extract.125 tsp ground ginger.125 tsp allspicepinch of salt3 eggs, large
Directions
Bring to just below boil the milk, cream, both sugars, cinnamon stick, nutmeg, vanilla, ginger, allspice and salt. At the same time, mix eggs. Once milk mixture has come to just below boil, remove from heat and temper eggs w/ mixture. Then add tempered eggs to milk mixture and heat to 170 deg F. Remove from heat and strain as necessary. Chill until entire mixture is cold, at least 4 hours or overnight. Add to ice cream machine and churn until a smooth mixture results. Return to an airtight container and place in freezer until mixture hardens.
