Quinoa and Fried Tofu

Ingredients
Quinoa Grain- 250 gramsVegetable Broth- 2 cupsExtra Firm Tofu- one BlockAny vegetables
Directions
Add quinoa and vegetable broth to pot. Bring to a boil. Lower heat to medium, simmer until all liquid absorbed.
While quinoa cooking, cut tofu block into rectangles, lay on paper towel to dry. Cut vegetables.
Using oil/cooking spray, cook tofu in a frying pan. When it appears golden, add vegetables for a couple minutes.
Add tofu and vegetables to cooked quinoa.
Enjoy!
