For filling:10 medium apples peeled and sliced1/3 cup sweetened dried cranberries2 tsp. cinnamon1 tsp. nutmeg2 Tblsp Brown Sugar2 Tblsp Whole Wheat FlourFor Topping:1/2 c. Quick oats1/2 c. Whole wheat flour1/2 tsp cinnamonpinch of ground cloves1 tsp vanilla extract (pure)1/4 c. brown sugar2 Tblsp I can't believe it's not butter (stick) softened1/4 c. chopped walnuts
Peel and slice apples. Mix in all other filling ingredients and let sit for 15 minutes so juices begin to extract from apples. Pour into oval Corning Ware casserole dish.
In separate bowl combine all ingredients for topping. Stir well and sprinkle evenly over top of apple mixture.
Bake in preheated over at 325 degrees F for approximately 40 minutes.
Serve warm or reheated in microwave. Perfect topped with a dollop of fat free Cool Whip.
