Kale & Red Skinned Potatoes

Ingredients
2 Tbls of Extra Virgin Olive Oil1/2 Fresh Parsley1 Teaspoon Sea Salt & Pepper1 Cup chopped red skinned potatoes2 cups chopped kale2 cloves garlic
Directions
Preheat oven to 400 F and grease a baking dish Chop garlic, parsley & potatoes and mix together with salt/pepper & 1 tablespoon of olive oil. Place in baking dish and cook for 45 min or until potatoes are tender. Saute chopped kale with remaining olive oil. Salt & Pepper to taste.
