Apricot-Glazed Salmon with Herb Rice

6 salmon filets (4 oz each)1/4 t. salt1/8 t. pepper1/3 c. white wine or reduced sodium chicken broth1/3 cup apricot spreadable fruit1/2 t. grated fresh ginger root2 c. reduced sodium chicken broth1 c. uncooked long grain rice2 t. butter2 "T. dried chopped apricots2 T. minced fresh parsley1 T. minced fresh chives1 t. minced fresh thyme or 1/4 t. dried thyme3 T. sliced almonds, toasted
1. Place salmon in a 13 x 9 inch baking dish coated with cooking spray. Sprinkle with salt and pepper. In a small bowl, combine the wine, spreadable fruit and ginger; spoon over salmon. Bake at 375 degrees for 15 - 20 minutes or until fish flakes easily with a fork.
2. Meanwhile, in a small saucepan, bring the broth, rice and butter to a boil. Reduce heat; cover and simmer for 10 minutes. Add apricots; cover and sook 5 - 8 minutes longer or until liquid is absorbed and rice is tender. Stir in the parsley, chives and thyme. Serve with salmon. Sprinkle each serving with almonds.
