Best Pot Luck Dish Ever (Rice salad)

Ingredients
Rice pilaf:1/2 c dry red rice1/4 cup dry wild rice1/2 cup dry brown basmati rice3-4 cups boiling water2t Bragg liquid aminos2t tamari3T lime juice4T unseasoned rice vinegar2t sesame oil2t olive, hemp or flax oil1/4 t grated fresh ginger1/4 t grated fresh garlic1 kaffir lime leaf, grounda drop or two of chili oil or a few red pepper flakessalad:6 oz mixed baby greens2 cups sprouted green and black lentils2cups sliced cucumbers1 avocado, cubed or sliced1 cup grated carrot1/c cup grated beet (rinsed)1/4 cup sunflower seeds
Directions
Combine rices and boiling water. Cover and let sit for 1/2-1 hour, till tender. Drain, rinse, drain.

combine dressing ingredients and set aside. Pour 2/3rds of the dressing over the grains and toss. Set aside for an hour or more.

Lay out greens on a platter. Cover with grains mixture in the middle and surround it with all the other veggies and such. Drizzle the veggies with the remaining dressing and serve.
