Asian Noodle Stir Fry

1 tsp. olive oil2 cloves garlic, minced3 cups frozen Asian Style Veggies (snap peas, water chestnuts, baby corn, carrots, red peppers, broccoli)9 oz. raw shrimp1 oz. dry roasted peanuts1 T. sesame oil2 T. seasoned rice vinegar4 oz. (dry weight) whole grain thin spaghetti, cooked
Makes 2 huge portions (600 calories) or 3 smaller portions (400 calories).
Cook pasta.
In a wok or large skillet over medium high heat, saute garlic in 1 tsp. olive oil until fragrant. Add 3 cups frozen veggies, stir frying until cooked but not mushy. Add 9oz. of shrimp and cook until pink. Add peanuts and cooked pasta, continuing to stir frequently. Finally, add 1 T. sesame oil, 2 T. seasoned rice vinegar, and soy sauce and/or sriracha to taste. Enjoy!
