Fish in Parchment

Ingredients
2-4 pieces firm white fish½ tbsp. butter (melted)¼ cup grated carrot¼ cup thin cut celery½ tsp chopped parsley1 tbsp chopped green onion1 tbsp vegetable brothJuice of ½ of a lemon – save other ½ for garnish
Directions
Directions: Place fish fillets in the middle of parchment paper. Top with melted butter and sprinkle with all other ingredients. Fold parchment like an envelope – use toothpicks to hold closed. Place in baking dish. Bake at 400 degrees for about 20 minutes. Open paper and serve, using sauce in paper wrap over serving.

You can serve with or over rice or pasta (not included in nutritional info)

Note: Add or substitute, as desired, other veggies such as zucchini, mushrooms, chopped spinach, etc. Pieces should be in sizes that will cook in the 400 degree/20 minute timing.
