Roasted Peppers, onions, mushrooms, and green beans

Ingredients
2 cups green peppers, sliced2 cups onions, sliced2 cups green beans2 cups mushrooms, sliced3 T fresh cilantro, chopped1 T garlic powder1/4 t ground black pepper1/2 t paprika1 T Extra virgin olive oil
Directions
1. Preheat oven to 400 degrees.
2. Add oil and spices to baking dish and stir. (I use a Pyrex)
3. Add vegetables and toss.
4. Bake for 30 minutes, stirring half way through.

Makes 6 3/4 cup servings
