SOUTH BEACH Friendly Chocolate Oatmeal Pancakes

Ingredients
Calories will vary depending on which kind of cottage cheese and how much egg you use.-1/4 cup Low fat cottage cheese (I used 2 percent but anything 2 percent or low is fine)-1/2 cup dry oats (I used Quaker)-3 egg whites (May use 4- quantity of pancakes increases, but i prefer how they taste and the consistency with only 3, plus its just a little less calories)-1/4 tsp cinnamon (to taste)-1/4 tsp nutmeg (If you like nutmeg and chocolate together-I do, but its optional)- 1 1/2 Tbsp unsweetened cocoa powder-6 tsp or 2 tbsp spelnda (Also to taste)Toppings: Sugar free or very low sugar syrup, sugar free or low sugar preserves, Sometimes i even do a tiny TINY thin layer of peanut butter (dont overdo it south beach dieters!)
Directions
-Blend All ingredients (Cottage cheese, oats, egg whites, cinnamon, nutmeg, cocoa, splenda) In a blender until mixed well.
-Spray pan with cooking spray and cook over med heat until lightly browned on both sides

- Special twist (sorta, haha): I use three egg whites which makes it blend less smoothly, so i blend it just a little so that it ends up. if i do it right. that the cottage cheese doesn't completely mix in. and when you cook the pancakes, the cottage cheese melts inside, and i dont let it cook ALL the way, so the inside is a little gooey, and when you bite into it, its absolutely DELICIOUS, the gooey mix of the cheese and the sweet chocolate!

4 egg whites: Two med pancakes
3 egg whites: One Large pancake
