Hummus & Zucchini Soup

Ingredients
1 tsp. olive oil1 small onion3 zucchini, sliced about 1 lb.2 cups chicken stock (can use vegetable)6 oz. ready made hummusfresh lemon juice to tastesalt & pepper to tastechopped parsley to garnish
Directions
Heat oil, add onion and zucchini till they begin to soften, appox. 4 minutes. Add stock and lightly salt & peper. Bring to boil, cover and cook gently for about 20 min. til tender. Allow to cool, puree in blender and hummus and combine. Return to saucepan and reheat over medium-low heat. Taste & adjust seasoning adding lemon juice and sprinkling with parsley before serving.
