Spinach and Onion Scramble

Ingredients

2 large eggs1/4 c whole milk1 tbsp curry, or to taste1/2 c onions, diced1 c spinach2 cloves garlic, pressed1 tbsp olive oil (or of your choice)1/4 c v8/tomato juice (optional)
Eggs, milk and spices in a small bowl. Beat well and set aside. Wilt veggies in oil in frying pan to preference. Add egg mixture (and juice if wanted) and scramble until you've cooked all the whey out. Yum.
Play around with difference veggies and different spices. Carrots are surprisingly yummy.
It will probably take you far less time to cook than it takes me. I have to cook eggs at very low temperature because if they brown up it makes me sick.
Is a solid breakfast for one, or split it if you want something else with it.
