Ingredients
1 Tbsp olive oil2 Large Portabella Caps, coarsely chopped1 garlic clove, minced1/4 c. chopped green onion1/2 c. skim milk2 Tbsp. sour cream1 Tbsp. curry powder1 tsp. chili powder
Directions
In a wok or large sauté pan heat oil on medium heat. Add the garlic and let cook just until you start to smell it. Add the chopped portabella and let them cook about 10 minute, until they have cooked down and released their liquid. Add the green onion and let it cook down too. Next, add the chili and curry powder to taste. Then add the milk and sour cream. I microwave the milk for 30 seconds prior to adding it and let the sour cream sit on the counter while cooking so that they don't curdle when added to the heat. Then just let it come to a simmer and cook down a little. I am interested to see if adding some corn starch will thicken it up at all. This makes two 1.5-cup servings, approx.
