ok, so....
as i am in love with my newly purchased hand blender and blend about anything i can possibly find at the moment just to use this nifty little gadget.... blend your can of beans, i suppose you can use any type you have on hand, just adjust the nutrition info accordingly....
you might want to add warm water bit-by bit to get a smooth paste. / once beans are blended into a paste, set aside.
blend / grind your spelt flakes into a flour. (once again, you can use a combo of different types of flakes or just use one you have on hand, be creative, others that will work: barley flakes, oats-steel cut, rye flakes etc...)
once you have your fine flour, add you baking soda to the dry mix. you can add spices and hers if you like, i actually added a tint of chai spice and a dash of cardamom and carraway to mine... you could make them sweet too, by perhaps adding a sweetner or honey with a dash of cinnamon or cassia - depending on your taste.
slowly add your dry mixture to the beans, folding in slowly, adding warm water as you go bit-by bit, as the flour is highly absorbent and will suck up any moisture present very quickly. mix until you get a ver stiff dough that forms a non-sticky ball ... almost like a cookie dough....
place on a flat baking pan and roll out to an even flat square. the size depends on you and the quantity or size crackers you want. note: the dough mixture rolled out should be the same thickness as a ryvita. once rolled out nicely and eveny, cut you squares. i used a ruler to get even sized squres at 65cmx65cm each. you can use cookie cutters too if you want if you want pretty or interresting crackers for entertaining etc.... i also used a fork to punch holes in to add texture ....oh!oven must be pre-heated to 180degrees - !! bake for approx 25mins or until brown and hard. grill for a further 3mins or so if you wat them a darker tint. let them cool and you are ready to get crackin'!!! yum :) store in an airtight container and enjoy!!
