Vegetarian Nachos

Ingredients
1-15 ounce can black beans, low sodium, drained1 large bell pepper (any color), diced1 large onion, diced1 cup vegetables, diced (zucchini, yellow squash, broccoli, cauliflower, more peppers: whatever is in the fridge)Hot peppers, finely diced (optional)2 tbsp salsa (of your choice)1 tbsp cumin1 tbsp chili powder1 tbsp dried or 3 tbsp fresh cilantro (finely chopped)pinch of saltNon-stick cooking spray1/2 cup grated pepper jack cheese
Directions
Saute' all peppers in non-stick spray for 3 minutes.
Add onions and other veggies; saute' 3 more minutes.
Add black beans, salsa, and spices, and cook for 5 minutes.
Transfer to baking dish, and sprinkle with cheese.
Bake in 350 degree oven or toaster oven until cheese is bubbly.
Serve with chips for scooping and salsa!

    I loved these!!! Very filling low cal and easy to make. I put zuchinni in mine and sauted for a little longer then recomended and tasted great. I will make these again! - 12/9/10
