6 large eggs, 1/2 a cup of bell peppers, 1/2 cup of fresh mushrooms, 1 6-oz package of canadian bacon chopped and 1/2 cup of low-fat cheddar cheese.
First, saute bell peppers, mushrooms and bacon for about 5 minutes. Put this into a bowl, let slightly cool. Add in the eggs. Mix well. Pour into a cupcake/muffin pan sprayed with cooking spray or lined with cupcake cups. Makes 8 "muffins".
