white fish 800gsmoked haddock 200gbutter 1 tbsboiled potatos 800gsemi skimmed milk 200ml (for the sauce)semi skimmed milk 50ml (for the mash potato)frozen peas 350gcheddar cheese 75gsalt and pepper to tasteplain white flour 50ghalf an onion with 5 cloves stuck in it (for the poaching)
boil the milk and add the onion with cloves into the pan. Add the haddock and poach for 5 mins and take out the fish once cooked. Then add the other white fish and poach until cooked then remove and place all fish in the baking dish that you will be using. Turn off the milk and keep aside. Boil the peas and once cooked drain and keep aside. Boil the potatos, drain and keep aside.
To make the sauce: Melt the butter and add the flour and whisk all the time as to not stick then add the milk mixture and keep whisking until the sauce becomes thick. Add salt and pepper to taste and the once ready add the cheese (grated for quicker melting) and turn of the heat.. it will thicken more once cooled. Pour this over the fish in the dish and add the peas and mix well. Add the 50mls of milk to the potatos and salt and pepper to taste and mix until fully mashed. Spoon on the potato so all dish is fully covered and flatten down, then with a fork score the top with any pattern you like as these marks give a little crunch to the pie. Cook in a oven gas mark 6 for 20 mins or until golden brown.(With a knife cut the pie into 6 portions that way your caleries are accurate!!!) Serve with vegetables of your choice.. and enjoy!
