Beef Red Wine Stew

Ingredients
2-3 T olive oil1 pound lean stew meat1/2 c. flour1 t. thyme1/2 t. garlic salt1/2 t. salt1/2 t. black pepper1.5 cup chunked onion1 c. red wine1 large potato, cubed1 c. carrots, cut into large chunks1 15 oz. can diced tomatoes, no salt added2 cups beef broth2 cups water
Directions
Toss stew meat in bag with flour and dry seasonings. Brown over medium heat in 2-3 tablespoons olive oil. Remove beef from pan and deglaze pan with a bit of red wine. Add remaining vegetables, wine, water and beef stock. Heat and stir over medium heat until liquids begin to simmer. Cover and reduce heat to maintain a gentle simmer for about 2 hours or until stew is done, adding cubed potato during the last 30 minutes of cooking.
