L.R. Pumpkin orange muffins

Ingredients
1-1/2 cups (180g) whole wheat flour1 cup (110g) oat bran1-1/2 tsp. baking soda1-1/2 tsp. ginger3/4 tsp. nutmeg1/2 tsp. salt188g sucanat or 1 cup brown sugar2 T. oil2-1/2 cups cooked mashed pumpkin3 eggs, lightly beaten1-1/2 tsp. vanilla1-1/2 tsp. orange flavoring1 cup buttermilk1 cup (160g) raisins plumped in hot water and drained
Directions
Preheat oven to 375. Spray 24 muffin cups with non-stick spray. In a large bowl, combine dry ingredients. In another bowl, whisk together wet ingredients. Stir wet into dry just until mixed. Stir in raisins. Divide among prepared muffin tins. Bake for about 20 minutes or until done. Makes 24 muffins.

    These muffins are moist, flavorful and have a great texture! I omitted raisins (not my favorite), but added 1/2 cup chopped pecans. Made only 1/2 the recipe and used one egg. - 11/15/09
