Egg beater omelet cups

2 cups Egg Beaters1 cup diced extra lean ham (I buy a single 1/2 inch slice from the deli counter)1 cup diced bell pepper, red or green1 cup Kraft fat free shredded cheddar1 cup shredded colby jackNon calorie butter flavored cooking spray
Preheat oven to 350.
Mix all ingredients together in a bowl. Coat a 12 cup muffin pan with cooking spray. Use a tablespoon or ladle to evenly distribute mixture into each cup of the muffin pan. Bake for 20 minutes or until a knife inserted in center comes out clean. Cool and serve.
Makes 12 servings, nutrition info is calculated per egg cup.
These can be either refrigerated or frozen for later use.
