Low Carb Hamburger Casserole

1-lb ground beef1 medium onion, chopped2 anaheim chilis1 pablano chili1 box (8 oz.) full-fat cream cheese3 cups shredded cabbage (use a cole slaw mix for convenience)1 cup cheddar cheese, shredded
I use fresh grilled chili peppers when I can make them. If not, use a large can of chopped green chilis instead.
Fresh tomatoes are great, but a 14oz can of diced tomatoes will do in a pinch. Ro-Tel tomatoes with chilis are especially good. If you use canned, make sure you drain as much of the moisture out first.
Don't use fat free cream cheese. It makes this dish taste awful.
1) in a large skillet, brown the ground beef, onions, garlic, and chilis all at the same time. Do not drain.
2) Once the above are cooked, add the tomatoes and cabbage and cook for another 5 minutes or so.
3) Add the cream cheese in chunks. Cover the pan and let it cook for about 5 minutes to soften the cream cheese.
4) Once cream cheese is soft, stir it in, but leave some chunks of cream cheese.
5) season to taste with salt and pepper.
5) top with the shredded cheddar cheese and let it melt.
