Devine Shrimp and Pasta

16 oz. Fettucine pasta 2 cups cleaned medium fresh Shrimp (I use frozen)1 cup (8oz) Philadelphia Neufchatel cream cheese1 can (@ 14oz) Chicken Broth5 cups Fresh Spinach, chopped1 cup Parmesan cheese, grated2 tsp minced garlic1 (14 oz) can diced tomatoes; drainedsalt & pepper to taste
COOK fettuccine as directed on package
While pasta water is heating, heat large skillet or pot to medium-high heat. Add cream cheese and chicken broth, cook and stir 3 to 6 minutes until cream cheese is melted and mixture is well blended. Add parmesan cheese, garlic and salt & pepper to taste. Add shrimp and stir until cooked thru (if using frozen shrimp, until heated thru). When pasta is nearly done, add spinach & drained tomatoes to shrimp mixture and stir well.
DRAIN pasta; place in a large bowl.
Stir in shrimp mixture.
Serve with a simple green salad for a perfect meal they'll still be talking about the next day!
