Baked Lemon Greek Potatoes

Ingredients
1/3 cup Olive Oil1 1/2 cups Chicken Stock1/4 cup of fresh lemon juice2 cloves of garlic1 tsp thyme (or 1 tbs fresh)1 tsp rosemary (or 1 Tbs fresh)salt and pepper to taste6 potatoes peeled and quartered
Directions
1 serving is half a potato (2 wedges)

Preheat oven to 350*F

In a small bowl mix the first 7 ingredients. Line the potatoes flat in a baking dish. pour the mixture from the bowl over top.

Cover and bake1 1/2 to 2 hours. turn the potatoes after 45 minute of baking. Potatoes are down when they are tender firm when pierced with a fork.
