Tofu-Kale Casserole

Ingredients
1 block firm lite tofu drained and pressed3 cups minced Kale 3 cloves garlic1 Tbs ketchup 1 Tbs Dijon Mustard1 Tbs Braggs Liquid Aminos1 Tbs Franks Red Hot1 cup minced carrot1 cup minced red pepper1 cup chopped onion
Directions
Pre heat oven to 350. Use food processor to mince Kale, remove to large bowl. Add onion, garlic, carrot, and red pepper and process until roughly chopped. Add to kale. Process tofu until roughly chopped, add to bowl. Add all remaining ingredients and mix well. Press into a lightly sprayed loaf pan and bake for 45-60 minutes. Makes 8 servings
