Cheddar Rice Patties

1 C (4 oz. shredded low-fat Cheddar cheese1/2 C minced onion3 T all-purpose flour1/2 tsp salt1/4 tsp ground black pepper3 large egg whites1/8 tsp cream of tartarVegetable cooking spray2 C cooked rice
Combine rice, cheese, onion, flour, salt and pepper in medium bowl. Beat egg whites with cream of tartar in small bowl until stiff but not dry. Fold beaten egg whites into rice mixture.
Coat large skillet with cooking spray and place over medium heat until hot. Spoon 2 to 3 tablespoons batter into skillet for each patty. Cook patties, turning once, until golden brown on both sides. Serve warm. (Note: nice with applesauce or sour cream.)
