Chunky Caramel Apple Cookies

Ingredients
2/3 cup all purpose flour1/4 teaspoon cinnamon1/4 cloves1/4 teaspoon nutmeg1/8 teaspoon salt2 and 1/2 tablespoons unsweetened applesauce1/2 cup brown sugar1 egg white beaten1/3 cup chopped apples with skins1/3 cup raisins1/3 cup butterscotch chips
Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly brush muffin pan cups with peanut oil to decrease chances of sticking (if desired).
In a medium bowl, sift together flour, baking soda, cinnamon, cloves, nutmeg, and salt add oats and stir to combine. In a large mixing bowl mix applesauce, sugar and egg white. Stir in flour mixture, and mix thoroughly. Fold in chips, apples, and raisins.
Drop by rounded tablespoon into prepared muffin cups. Bake for 12 to 14 minutes. Cool on wire rack.
