Cauliflower with Cashew Curry

Ingredients
1 head Cauliflower, washed cut into florets2 large onions, quartered2 medium tomatoes, quartered1 tbsp ginger2 cloves minced garlic1/2 cup cashews1 cup milk (any milk)1 tsp salt1 tsp turmeric1 tsp chili powder1 tsp garam masala (recipe included)1 tsp cumin 4 tbsp olive oilCilantro for garnish
Directions
Cook quartered tomatoes and onions in 2 tbsp of olive oil for two - three minutes turning once.
Place tomatoes/onions in blender or food processor and blend. Add all ingredients, except 1 tsp. cumin.
Blend into puree and set aside.
Add remaining oil in skillet on high heat. Add cumin and let crackle. Immediately add cauliflower and stir fry for a minute. Add cashew curry over cauliflower. lower heat and simmer for 20 minutes until cauliflower is tender or desired texture.
Garnish with Cilantro when ready to serve.
Serve with rice or flat bread.

Cardamon
1 tsp Cinnamon
1/2 tsp nutmeg
1/2 tsp. cloves, grounded
