1 1/2 c. skim milk (purist blood type O Non-Secretors can substitute pineapple juice)3 eggs2 Tbsp. lemon juice1/4 c. butter1/4 c. agave (or molasses, or vegetable glycerin)3 1/4 c. sifted millet/quinoa flour (or other gluten-free flour)1/8 c. arrowroot1/8 c. flax meal1 1/4 tsp. salt1 Tbsp. xanthan gum1 Tbsp. active dry yeast
This recipe makes 16 slices of bread using the Zojirushi Home Bakery Supreme. Follow the instructions for the bread maker. Place liquid ingredients in reservoir. Add dry ingredients. Xanthan gum and yeast are placed on top the dry ingredients to stay dry until mixing begins. Basic Wheat Setting is selected on the Zojirushi Home Bakery Supreme (pre-heat 40 minutes, kneading 13-18 minutes, rising 45 minutes, stir down and second rising 20 minutes, stir down and third rising 30 minutes, baking 67 minutes).
