Apple Crepes

Ingredients
* 1 cup all-purpose flour * 2 eggs * 1/2 cup 1% milk * 1/2 cup water * 1/4 tsp salt * 2 tbsp melted butter * 3 tbsp granulated sugar * 1/2 tsp vanilla extract * 1/2 to 1 apple (Golden Delicious works best)Optional topping: * 3 tsp powdered sugar
Directions
1. Combine flour, eggs, water, and milk in mixing bowl. After melting butter, add to mixture, and then add salt, granulated sugar, and vanilla.
2. Let mixture sit in refrigerator for 15 minutes and chop apple into 1x1 cm cubes. Don't peel the apple.
3. Add about half of the apple cubes to batter.
4. On stove over medium heat, pour approximately 1/5 of batter into skillet and add some remaining apple cubes before crepe cooks completely. When crepe is golden-brown, flip briefly to cook other side.
5. When crepe is golden-brown on both sides, transfer to plate and roll with apples on inside of crepe.
6. (Optional) To serve, sprinkle powdered sugar over crepe.
