4 T. Butter4 T. Flour4 C. 1% Milk.5 C. Grated Parmesan Cheese.5 C. Shredded 2% Mozzarella Cheese1 C. Shredded 2% Cheddar Cheese1/4 tsp. Dry Mustard1/2 tsp. Salt1/4 tsp. Black Pepper1 pinch of Nutmeg
Melt butter in sauce pan. Add flour and whisk until smooth. Let simmer about 2 minutes. Add milk slowly while whisking. Add salt, pepper, nutmeg, and mustard. Whisk to combine. Add Cheeses one at a time, wisking after each. Let simmer to reduce about 5 minutes or until desired consistancy.
Makes 4 Cups. Serving size 1/4 of a cup.
For a Cheeser sauce, use only 2 C. Milk.
