Green Papaya Salad

Ingredients
2 cups grated GREEN papaya1 small red chilli1 small clove of garlic1/2 cup of fresh green beans1/2 cup of fresh ripe cherry tomatos (halve if the toms are large)Juice of one lime1/2 tbsp Palm Sugar1 tbsp Fish Sauce1 tbsp Dried Shrimp (available from asian grocer)Approximately 10 dry roasted peanuts
Directions
Shread the papaya using a grater, alternatively, purchase the papaya already grated from your asian grocer.

In a pestle and mortar, grind the garlic and palm sugar.

Add lime juice and fish sauce to the mortar along with the beans, chilli, peanuts and tomatos. Bruise the contents before adding the papaya and mixing ingredients throughly.

Serve.
