Tomato Basil Soup

Ingredients
1/2 c onion; chopped2 cloves garlic, smashed1 tbsp olive oil1.5 cn whole tomatoes; 28-ounces -ea.1 c organic vegetable broth (or chicken broth)1 tsp balsamic vinegar1/2 c whole milk 1 tbsp dried basil1 salt and pepper; to taste
Directions
Heat oil over medium heat, saute onions and garlic until tender, about 5 minutes. Add tomatoes, broth, vinegar, sugar, dried basil, salt and pepper. Bring to a light boil, turn down heat and simmer for 20 minutes. Using an immersion blender, puree the soup until desired consistency. Stir in milk. Remove from heat. Makes 6 servings.
