* Banana, fresh, 4 medium (7" to 7-7/8" long) * * 3 large brown eggs * Honey, 1 cup * *Nutiva Hemp Shake - Chocolate, I cup * Oats, 2 cup * *Whole Wheat Flour, 1 cup * Baking Powder, 3 tsp * Salt, .5 tsp * Vanilla Extract, 1 tbsp * *Bob's Red Mill Unsweetened Flaked Coconut, 2 cup
Preheat oven to 350 degrees. Line muffin tins with papers, and spray with Pam. In the food processor, cream bananas and eggs. Transfer to large bowl and add honey, hemp, salt, vanilla and coconut. Mix well. Fold in oats and flour and add baking powder. Fill muffin tins about 2/3 full. Bake for 35 minutes, or until toothpick inserted into center of muffin comes out clean.
