Blue Cheese & 3 Pepper Omelet

Ingredients
2 eggs1 oz Blue cheese1 C 3 pepper & onion frozen vegetables
Directions
Saute 1 cup 3 pepper & onion frozen vegetables in a little extra virgin olive oil; Remove from skillet.

Crack 2 eggs and whisk in bowl until mixed.. Pour in skillet add the 3 pepper & onion vegetables. Add 1 oz of Blue Cheese and season with salt & pepper.

Cook until bottom side is firm, flip, cook until done (Bottom side is firm); fold in half, serve.
