Ingredients
1 med head cauliflower4 T weight watchers whipped cream cheese2 T ff half and half1 oz shredded parmesan cheese2 pieces of sun dried tomatoes finely chopped
Directions
boil cauliflower until tender and drain
mash with cream cheese, half and half (blend in blender for desired consistency)
add cheese and tomatoes

season w/ pepper, salt, basil, and parsley

Makes approx 4 servings (1/2 cup)

    Skipped the tomatoes, but added Mrs. Dash Table Blend seasoning and used 1 oz. regular cream cheese instead of WW. Blended it in the magic bullet and it came out perfect. Sooooo tasty!! - 2/15/11
