MacLaury's Crockpot Turkey Chili

Ingredients
2 lbs lean ground turkey2 cans LOW SODIUM black beans1 can LOW SODIUM kidney beans2 cans sweet corn, 1 can drained2 cans tomato soup, 1 can water2 packets LOW SODIUM taco seasoning1 large jar medium salsa (approx 44 tbsp)4 cups white rice
Directions
Brown ground turkey in skillet; drain. Put turkey in crockpot. Add beans, corn, tomato soup, water, salsa, and taco seasoning to crockpot and stir.

Cook on high 2-4 hours, or low 4-6 hours. I prefer cooking on low to allow the flavors to have longer to meld.

With a half hour left, cook rice. Add cooked rice to crockpot and stir.*

I like to top each serving with shredded mexican blend cheese and sour cream. Serve with a side of tortilla chips.

Makes approx. 16 one cup servings.

*I use instant (boil-in-bag) rice. Allow extra time for non-instant rice.

NOTES:
To cut way down on sodium, make your own taco seasoning. Even with the low sodium ingredients, it's still got more than I'd like. Making your own will decrease the sodium quite a bit.
