Stuffed Shells

Ingredients
1 lb ground beef5 oz frozen spinach (half a box), thawed1 small onion, chopped fine2 cloves garlic10 oz neufchatel cheese8 oz part skim mozzarellapinch of crushed red peppersalt and pepper3/4 of a box of jumbo shell pasta, cooked half way1 tsp olive oil1 jar of spaghetti sauce of your choice
Directions
Heat olive oil in a non stic pan. Add onion, garlic and crushed red pepper. Saute with a pinch of salt and fresh ground pepper until onion begins to soften.

Add ground beef and a pinch more salt and pepper. Cook until beef is no longer pink. Chop spinach and make sure it is drained of as much moisture as possible. Add to beef and stir to heat and mix well.

Turn off heat and add neufchatel cheese and half your mozzarella. Stir to thoroughly mix together and set aside.

Take half your spaghetti sauce and pour into the bottom of a 9x13 baking pan. Place a generous tablespoonful of filling into each shell and place over spaghetti sauce in pan. Drizzle remaining sauce over top of stuffed shells and top with remaining mozzarella.

Bake for 20-30 minutes at 350 or until hot and golden
