New England Clam Chowder w/ Cauliflower Base

Ingredients
2 tbsp EVOO1/2 Large White Onion, chopped1 head of cauliflower chopped51 oz can of clams, drained, juice set aside1 oz dry Sherry
Directions
Add 2 tbsp of EVOO to bottom of soup pot. Put chopped onions in pot and cook on Medium until tender. Add in clam juice and chopped cauliflower and cook for 12 minutes or until fork tender. Puree cauliflower and onions with food processor and pour back into soup pot. Add clams and cook for 2 minutes. Drizzle in 1 oz of dry Sherry. Cook for 2 minutes then serve.
