White Bean and Sausage Cassoulet

1 5 cups sliced parsnips 1.5 cups sliced carrots3 cloves garlic, minced1.5 cups onion, chopped5 links Al Fresco Sweet Italian Style with fresh red and green peppers chicken sausage2 tsp. dried thyme1 bay leaf2 cans tomato sauce2 cans white beans(cannellini or great northern)1 tbsp. olive oil
Serves 8
1. Saute onions in olive oil until translucent.
2. Brown sausage and set aside to cool. When cool, slice into 1/4 inch slices.
3. Add beans (with liquid), vegetables, tomato sauce, and herbs to crockpot and mix well.
4. Cook on low for 8 hours.
