Ingredients
2 tbsp olive oil/vegetable oil.5 - 1 c chopped onion4 corn tortillaseggs
Directions
Put olive oil in a pan with onion and heat over low-medium heat until onions are almost clear. Rip corn tortillas up into small pieces (around bite-sized) and add to the onion and olive oil. Cook until tortillas get a little crunchy/firm. Set aside tortillas and onion.

Cook as many eggs as you want, scrambled are best.

Top cooked eggs with as much of the tortilla/onion as you want and its ready to go!

A good thing to go with this is low fat sour cream and/or salsa.
