Vegan Lower Fat Snickerdoodle Cookies

Ingredients
1 cup margarine, softened (I used Smart Balance Light w/ Flax Oil in the calculations)1 1/2 cups sugar 2 egg equivalent Ener-G Egg Replacer2 3/4 cups flour 1 teaspoon baking soda 1 teaspoon cream of tartar (can sub 2 tsp baking powder in place of tartar & soda)1/4 teaspoon salt (only if using unsalted marg)Cinnamon sugar 1 tablespoon ground cinnamon, mixed with 1/4 cup sugar
Directions
Cream together butter and sugar, then beat in eggs, one at a time.
Mix dry ingredients together, and mix into butter mixture.
Roll teaspoonsful of dough into balls.
Roll in cinnamon-sugar.
Place on ungreased cookie sheets.
Flatten slightly if desired.
Bake for about 10 minutes at 375 degrees F or until very lightly browned.
Cool, and store in a tightly covered container

Original recipe claims to make 36 cookies; we made 80-odd small cookies instead. Also, it helps to flatten them slightly to get a flatter cookie (not too flattened though, as they do spread some).
