Danielle's Quick Mushroom Meat Sauce

Ingredients
2 tbsp olive oil1/2 cup diced onion5 cloves garlic, minced5 basil leaves, torn into small pieces1 lb. 93% lean ground beef1 28 oz can crushed tomatoes10 oz. pkg of whole baby bella mushrooms1 tbsp dried oregano1/2 tbsp thyme1/2 cup white wineSalt and pepper to taste
Directions
Heat 2 tbsp. olive oil in large, deep skillet over medium high heat. Saute onions until translucent. (About 5 mins.) Add minced garlic and saute another minute. Add ground beef. Cook until beef is no longer red. Add basil, mushrooms (slicing mushrooms is optional), wine and tomato puree. Reduce heat to low.

Simmer for at least 20 minutes. Taste before serving and season with salt and pepper as needed.

Makes 12 3/4-cup (scant) servings.

Serve over 1 cup of cooked whole wheat pasta. Green salad with a simple viniagrette dressing is a great side. If you need bread, try a toasted whole wheat and flax English Muffin drizzled with a hint of olive oil and a sprinkle of salt or garlic powder. Enjoy!
