Spanish Rice Bake

2 cups Soy Crumbles2 T vegetable oil1 C medium brown rice1 med. onion1 small bell pepper1 cup frozen corn1.5 cups stewed tomatoes1 T chopped cilantro1 t chii powder2 cups fat free colby-jack cheese
1) Heat oven to 375`F. Spray 2 1/2 qt casserole dish with cooking spray. In 10" skillet, heat oil over medium heat. Add rice, onion and bell pepper: cook 6-8 mins. Stir frequently, until rice is light brown and onion is tender. Stir in corn.
2) In casserole dish, mix remaining ingredients except cheese. Stir in rice mixture and 1 cup of the cheese.
3) Cover: Bake 20 minutes. Carefully remove casserole from oven; stir. Cover; bake 20-25 minutes longer or until rice is tender. Stir; sprinkle with remaining 1 cup of cheese. Bake uncovered 2-3 minutes or until cheese is melted.
