2 large courqette1 large aurbergine2 large onions2 tins of chopped tomatoesgarlicsalt peppermix herbs 1 red pepper1 green pepper1 yellow peppera little olive oil
slice all the vegatables into even size chuncks this is so they cook at the same time.
place in an oven prof dish place in oven with a little oil over them on gas mark 7 150 untill golden and sotf (15min) place the tin tomatoes in and the garlic and salt and pepper and cook for a further 15mins and serve with any poultry fish pasta or just on its own
