Vegan Cranberry-Chocolate Brownies

Ingredients
2/3 cup flour2 tsp baking powder1/2 tsp baking soda1/3 cup unsweetened cocoa powder1/2 cup raw vegan sugar1 cup unsweetened applesauce1 tsp cinnamon1/2 tsp PURE vanilla extract1/2 cup dried cranberries (optional, but they're in the nutrition)
Directions
Preheat oven to 350 degrees F. Lightly grease an 8x8" baking pan.

Combine applesauce, sugar, and vanilla in a large bowl. Add remaining ingredients EXCEPT cranberries. Once combined, fold in cranberries and spread batter in prepared pan.

[Feel free to replace cranberries with any other additions! Nuts and vegan chocolate chips work nicely!]

Bake for 25-30 minutes or until edges are pulling away from pan and center is firm. Let cool completely before slicing.

    This was very moist and fudgy. I used white whole wheat flour and replaced 1/3 of the sugar with Stevia sweetner. The cinamon flavor was too strong, Will leave it out next time. And I baked it for about 40 min. - 4/22/11
